Ealier this month we shared a recipe for Ancho Shrimp Tortilla Cups, a perfect hot weather entree. The forcast calls for an extended summer, so here's another cool salad recipe from the Renton Farmers Marker:
Pear and Fennel Salad
- 3 Tbs white wine vinegar
- 1/2 tps crushed anise seed
- 1/3 C olive oil
- 1 fennel buld, thinly sliced
- 2 pears, thinly sliced
- pecorino, shaved
Whisk 3 tablespoons white wine vinegar with 1/2 teaspoon crushed anise seed, salt and pepper in a serving bowl, then slowly whisk in 1/3 cup olive oil. Add 1 thinly sliced fennel bulb, 2 thinly sliced pears and some parsley; season with salt and pepper and toss. Top with shaved pecorino.
