Healthy Recipe: Autumn Pasta

Enjoy This Hearty Fall Dish...

... Using wheat noodles and a light, olive oil-based sauce to cut calories and add nutrition. Serve on a chilly night for a warm, satisfying meal that’s won’t expand your waistline.  Consider turning this meal into a romantic candlelight indulgence for two or more!

You’ll need
2 cups whole wheat pasta
1 Butternut squash
1/2 cup chopped spinach
1/3 cup crumbled goat cheese
1/3 cup candied walnuts
3 Tbsp olive oil
1 Tbsp dry white wine
1 tsp dried basil
1 tsp dried oregano
Salt and pepper to taste

Cook pasta to desired tenderness, and microwave or bake squash until fork tender. Skin squash and cube cooked meat.

In a separate, large pan, combine olive oil and seasoning over low heat. Let stand for 1-2 minutes, allowing seasoning to diffuse in oil. Add cubed squash and white wine. Toss thoroughly. Cover, increase to medium-low heat, and let simmer for 5 minutes.

Add all remaining ingredients except goat cheese, and toss thoroughly to ensure an even mixture. Serve in a large bowls and top with crumbled goat cheese and diced fresh basil (optional).
